When I think of my mom, I think of these recipes that I am posting today (my great grandmother was from Mexico, so my mom's cooking incorporated a lot of tortillas and rice and beans). We eat quiche quite a bit at our house. Everyone loves it, which is always a good thing. I like that it's quick, easy, inexpensive and versatile. I almost always have all of the ingredients on hand, to throw a quiche together. I have made sausage quiche before, but this recipe really takes the cake. My kids couldn't get enough of it. In fact, I caught my oldest daughter picking the crumbs out of the pie dish. This is great for dinner, served with a side salad and a crusty roll. Or for breakfast, served with fresh fruit.
