Savory Tomato and Basil Pesto Pie

I just had to share this recipe with you all. I have been drooling over Farmgirl Fare’s Savory Tomato, Mozzarella, and Basil Pesto Pie for over a year now. I finally had a chance to make this recently and I SO wish I would have made it a long time ago!

If you’re looking for a recipe to use up some of your homegrown or farmers market tomatoes, this would be a fantastic recipe! This was absolutely delicious and the leftovers were fabulous the next day for lunch. All of my kiddos loved it too, which is always a bonus.

The crust is to die for and very easy to make. It’s like a cheesy biscuit, but rolled out into a pie crust. Mmm…

Savory Tomato and Basil Pesto Pie

Don’t let the instructions scare you – it sounds like a lot of work, but this was very simple to make. I used my own basil pesto recipe, since I didn’t have all of the ingredients that Farmgirl Susan’s recipe calls for.

One thing I would recommend is to do the prep work in advance – make the pesto, slice the tomatoes and cheese. Once you have this done, the recipe can be assembled in no time.
