What’s For Lunch? (9/3-9/7)

As a way for me to keep track of our lunch box meals – and hopefully give you all some lunch box inspiration – I thought I would post each week about what we are eating in our lunch boxes. For me, it is nice to go back and get some ideas of what to pack, when I have a list handy. So, this is my “list”. 

As I’ve mentioned, it was the first week of school for us. Things went really well and we had no major hiccups, so it’s been a wonderful week.

We got to try out our new Klean Kanteen bottles on Tuesday, when I made cheese quesadillas. I simply made the quesadilla, rolled it up and stuck it in the container. My kids just removed the lid, turned the container upside down and the quesadilla just slid right out. I am happy to report that the quesadillas were still warm at lunch time!

You’ll notice that I never pack a drink. This is because my kids buy milk at school each day. I would prefer that they have milk over juice boxes and it’s one less thing I have to worry about packing. Oh, and on Fridays I allow them to get chocolate milk as a “special treat”.

I also use homemade ingredients whenever possible. Whether it’s bread, nut butters, jellies or snacks, what I make at home is almost always a better alternative – no preservatives, no high fructose corn syrup, no yucky food dyes. A lot of these items can be made ahead, too, which makes lunch-packing time a breeze!

Here is what was in our lunch boxes this week…
  • MONDAY: No school
  • TUESDAY: Cheese quesadilla, applesauce, frozen blueberries, protein popper
  • WEDNESDAY: PB&J sandwich, string cheese, applesauce, Triscuits
  • THURSDAY: Ham & Swiss cheese roll-ups, carrot sticks w/ranch, frozen blueberries, protein popper
  • FRIDAY: Leftover homemade pizza, slow-cooker cinnamon apples, carrot sticks
