I've been really motivated to get some freezer cooking done lately. I'm sure it has a lot to do with the fact that my kids are back in school so I actually have time to get things done. With it being so hot around here lately (it's suppose to be 109 tomorrow - yikes!), I've been cooking a lot of meals in my Crock-Pot. But, I've also been busy enough, that I've been forgetting an ingredient, forgetting to put the meal in the Crock-Pot, etc. So frustrating! While I've dabbled in freezer cooking for quite awhile now, it's been quite some time since I've done it on a consistent basis. I just had to share this recipe with you all. I have been drooling over Farmgirl Fare's Savory Tomato, Mozzarella, and Basil Pesto Pie for over a year now. I finally had a chance to make this recently and I SO wish I would have made it a long time ago! If you're looking for a recipe to use up some of your homegrown or farmers market tomatoes, this would be a fantastic recipe! I've been craving cheesecake lately. Any kind of cheesecake. Blueberries just happened to be handy, so we just went with that. Mmm...these were so creamy and delicious! I will definitely be trying these with strawberries soon. Or cherries. Oh, the possibilities... I came across this site awhile back, called Calorie Count. You put in the ingredients and the number of servings and it calculates the nutritional facts for you. Pretty cool, right?! I decided to give it a whirl on these yummy homemade treats and this is what it gave me (for 8 servings): They are low sugar and low fat. That works for me! Prior to making this, I had never grilled zucchini before. But, I had heard great things about it and it has always sounded fantastic. So, when I bought this fresh zucchini recently, I knew what I had to do. I used my Misto Oil Sprayer (love this thing!) to coat the zucchini with olive oil, sprinkled with kosher salt (you could add pepper, too) and grilled to perfection. My entire family loved it. My son actually uttered the words "I LOVE this zucchini". It was a momentous occasion. ;) Drumsticks are really inexpensive and easy to cook. It's that time of year, when it's hot outside and all you can think about is cooling off with a frozen treat. Okay, maybe that's just me. I think about this all the time. ;) The kids and I plan on making a ton of homemade ice pops this summer, to help us stay cool - some that we found online and some that we will concoct ourselves. I've been craving baked oatmeal lately, but I knew wanted something different - maybe something fruity. So last night, while I was running through a list of flavor ideas, I decided that strawberries sounded good. I couldn't really find a recipe that I liked, so I decided to just wing it. One of the things I love about chili, is that there's so many ways to use it: chili and corn bread, Chili Billies, chili dogs, chili spaghetti, chili burritos or chili tacos. So, when I cook up a batch of homemade chili, I always make extra so that I can get at least a couple of meals out of it. Another great thing about homemade chili, is that you can use whatever ingredients you have on hand - change up the beans, add some fresh onion, change the seasonings, make it as spicy (or as mild) as you want. We make ours pretty mild - although, it seems like every time I make this I add a little more spice. I was trying to find something in my pantry a few days ago and found a couple of items that were expired. So, this week I've made it a point to cook from my pantry. My hope is to thin it out a little, so that it's more manageable - and organized! Plus, that's less trips to the grocery store, since I'm using what I already have on hand.
